I am in a bit of a pickle here. I want to propagate my Pothos to water. Their new home. However, they are too young and so I don’t know where to cut when they only have one leaf or just a few each.

Stem Cuttings

To grow roots, there has to be a bud that will form them. Look on the stem, to find little nubs. They are sometimes on the opposite side of the stem from the leaves.
It doesn’t matter specifically if there are several leaves to a cutting, or just one, as long as there are root nubs – they need at least one leaf to feed that root while it forms and grows. Without leaves, there is no transfer of sugars and other elements that the plant needs to grow.
In the one picture, the one that says ‘Close Up’ you can see a root that has emerged but then dried up.
Cut this stem below that point, closer to the soil level.
This looks like the only one that is long enough to propagate in the water method, but in time, they’ll grow longer and you can do more.
